Gujarat Special-Khaman Dhokla In Just 3 Easy Steps (english)

Ingredients
  • 1.5 cup Bengal gram flour (besan)
  • 1.5 tbsp Semolina (rava)
  • 4 tsp sugar 
  • 1 tsp ginger-green chili paste 
  • 1 tsp lemon juice
  • salt to taste 
  • 1/2 cup water
  • 1 tsp fruit salt
  • 3 tsp oil 
  • 1 tsp mustard seeds (rai)
  • 1 tsp sesame seeds (til)
  • 2-3 curry leaves
  • 1 tsp chopped green chili 
  • 1/2 cup water

How To Make
Step-1
take a bowl and add Bengal gram flour, semolina, sugar, ginger-green chill paste,lemon juice, salt to taste and water in it 
mix all ingredients well till we get a thick paste without lump 
now keep the mixture aside 

Step-2 
take a steamer add water to it and heat the water
now add fruit salt to the flour mixture and mix it slightly 
now take a steel plate and grease it with oil 
next pour the flour mixture in the plate and shake well so that it gets spread all over the plate 
next put the plate in the steamer and close the lid
steam for 10-12 mins on a medium flame 
open the lid and using tooth-pick method check if the dhoklas are ready 
if ready remove the plate and keep it aside
if not steam for some more time 

Step-3
take a pan
add oil in it and heat it
next add mustard seed and mix for few seconds
then add sesame seed and mix for few seconds
then add curry leaves and mix for few seconds
now switch off the gas and add 1.2 cup water to the mixture 
the spread this mixture on the dhoklas ane then allow the dhokla to cool down 
cut into desired shapes and serve with green chutney
