Khata dhokla/ steam dhokla / live dhokla
Recipe By Rashidaben Najmuddinbhai Kachwala

1 cup chana dal

1 cup rice 
1/2 cup. Khato Curd
3/4 tsp Baking soda 
Salt to taste 
1/2 tsp haldi
1 tbsp Ginger garlic 
Green chill s per taste
1 tsp Oil
2 onions ( optinal )

Rate ek tapeli ma chana dal n rice mix kari....properly wash kari nakho....add water n full night ene soak thava Dav..... Morning ma dal n rice na mixture ne blend karo n ek dum smooth n thick paste banvi lo ...  ek big steel ni tapeli ma empty karo....tapli half fill thavi joye n then add khato dahi( curd ).... Dhiyan rakso ke koi lump na rai jai curd ma....add salt to taste....n cover kari em warm part of kitchen ma mukidav for fermentation ( attho )....for minimum 6 hrs.....make ginger garlic n green chilly paste n add .... Have also add haldi powder n mix everything .....agar onion add karva hoi to kari sakai che optional che....pachi ek gas per steamer garam karva muko n thali ne grease kari ready kari lo.... Ek small tapeli ma half cup water n 1 tbsp oil garam karo.....kaman na batter ma baking soda nakho n add the hot water n oil mixture to active baking soda ....mix Batter quickly n grease kareli thali ma batter nakhi dav...thodu chilli powder sprinkle karo ..... steamer ma muki dav steam thava mate for 15 mins on medium flame....steamer na hoi to pressure cooker pan use kari sakai che.....n batter nakho to layer around 5 mm no karvano bav thick nai....15 mins pachi knife batter ma poke kari check kari ....agar clean knife nikle to they r ready....tray nikali thandi thava dav....spoon ya brush na help se dhokla na upper layer per oil lagavo....bav nai jem roti per lagave che em to keep it fresh n avoid drying.....thali thandi thai pachi  pieces kari nakho with help of knife... N khata dhokla ready to sever with tomato n garlic chutney


Tomato n garlic chutney
25 to 30 garlic cloves 
1 tbsp red chilly
2 tomatoes
1 tbsp oil 
1/4 tsp mustard seeds

Blender na small jar na pehla garlic ( lasan) ni kali n red chilly n little water ne blend kari paste banavo ....then ema cut tomatoes na pieces kari n em smooth paste banavo... Ek tapeli me oil heat karo n enama mustard seed ( rai ) crackle karo n pachi je paste ready kidho che e add karo....sote for 5 mins or till chutney leaves oil....side ma oil ave to its ready to be eat with any snake
