Kathiyawadi Specila -Ardiya Ni Mithai

Ardia Ni Mithai 
Recipe By Tasneembhen Hatimbhai Bharmal 

Ingredients:- 
1kg urad ni dal no ata kurkoro (type of rava)
Ghee 850g 
Sugar 700g
Gondand 250g
Mava fresh 700g
Dry friut 250g (as per choice) 
1/2 litre milk


Method :-
Urud no ata ma milk ane thodu ghee add kari ne mix karo. Ato sukho revo jove. Te baad ghav ya chaval chan va ni chani si aa ato chani lai. Ehan na si thick ato upar j rai jase. Je chane lo ata che ye ek tapela ma nikali lai.

Te baad saglu ghee lai ne ek tapela ma nakhe. Ane ehna gund nake ane ye gund fry kari lai. Gund fry thai jai toh ye gund nikali le ane yej ghee ma je ato apne taiyar kidhe lo hato ye add kari de. Ato brown colour no thai jai tivaar lag ehna seke. Ehne contiously halavta rehva no nai toh ye ata niche stick thai jase.

Brown colour no ato thai toh gas band kari do. Ane ye ata ma mava add karo. Mava ane ato ekdum mix thai javo jove. Ane ehma sugar, gund ane dry friuts add kari lo ane saglu mix kari lo. 

Te baad thodu mixture lai ne ek nahna na sa steel na glass ma nakho ane ehne spoon si thodu dabavo. Ekdum vadhare na dabavjo ke pachi ye nikalaj nai. Thodu dabavi ne ye glass ne jor si ek thal ma patko ta ke andar no mixture shape ma bahar avi jai. Ane em sagla mixture ne aam kari lo. Ane ehna thandu thava jo.

Ahna si tamne ardiya no shape mali jase. Agar aam na fave ya pachi kai problem hoi toh saglu mixture thal ma bichavi do ane thandu thava pachi ehna thukda kari lo jem biji sagli mithai na kari ye che apne.

Hamna thandi ni season ma toh ghanu j fine lage che ane ghano healthy pan che.
