BABA GANOUSH

BABA GANOUSH

Tired of all boring dips n spicy pickles. So here's a quick n healthy dip.
Have it on ur toast or with snacks.


*Ingredients*
( _For serving 4 ppl_ )
Egglplant 2
Garlic crushed 3
Parsley freshly chopped (can be replaced with mint)
Sesame paste 2tbsp
Curd 5 tbsp
Olive oil 2 tbsp
(3 tbsp for garnish)
Salt to taste


*Method*
Prick the eggplant with a toothpick roughly on all sides.
Brush some oil and roast on stove or can keep in preheated oven. Once skin turns from purple..brown to black keep aside to cool.
Remove d skin and separate d pulpy part.
Mash well till paste like. Add crushed garlic,sesame seed paste,salt mix well.
Then add olive oil n mix again then add curd n parsley or mint .
Refrigerate for 10 min
Garnish with olives, olive oil & red paprika  n serve in a flat dish
_Mixing is essential each time  for tastes to enhance._
