liver 1/2 kg
1 tbsp ginger/garlic paste.
1/2 tsp tumeric
1 tps salt
1 tsp chaat masala.
1 1/4 tsp crushed red chilli
1 tsp roasted cumin powder
1 tsp coriander powder
1/2 tsp all spice powder (garam masala)
METHOD.
-place liver/kaleji in a big bowl,prick all over with a fork,add all the spices ,except the salt.leave it for 15-20 mins.
-heat oil,sprinkle some cumin seeds add all the marinated liver and fry
for 10 mins.
-then add the salt and keep it on a low heat (dum)
-the meat will stay very tender 100%!!!
- garnish it with fresh green chillies and coriander and serve it with paratha or poori.
