Ingredients
- Few saffron (Kesar) Strands
- 1/2 cup chopped pistachio (pista)
- 4 cups full fat milk
- 5 tbsp sugar
- 1 tbsp cornflour (makkai nu aato)
- 1/4 tsp cardamon powder (elaich)
How To Make In Gujarati
- pehla a deep pan/ tapeli lo ane yehma milk ane sugar add karo..
- milk ne 5-7 mins tak barabar boil thawa do taake sugar poori barabar melt thai jai
- hawe ek small bowl lo yehma kesar ane 1 tbsp spoon milk add karo barabar mix karine side par mukido ... taake colour chade..
- hawe ek bijo bowl lo yehma 1 tbsp cornflour and 2 tbsp water lo ane mixture banawilo.. cornflour barabar mali jawo joiye...
- hawe aa cornflour-water nu mixture ne doodh ma nakhido
- ane doodh ne continously stir karta howa 25 mins tak medium flame par pakavo
- doodh almost half thai jaase ane slite thick paste bani jaase
- pachi yehne gas par thi utarilo ane yehne room temperature par aawi jawa do
- pachi yehma kesar-milk nu mixture add karo ane pista add karo...ane elaichi nu bhuko add karo ane barabar mix karilo
- pachi yeh mixture ne kulfi mould ma bharilo... ane agar kulfi moulds na hoi toh bowl ma jambawilo
- bowl ne cover karjo ane pachi deep freeze kari dejo 8-10 hours or poori raat
- kulfi moulds ma nakha hoi toh ice-cream stitck use karjo nikalwane
- ane agar bowl ma rakho hoi toh spoon si server karjo
How To Make In English
- first take a deep vessel or pan and add milk and sugar in it
- boil for 5-7 mins on medium flame so that all sugar melts
- now take a small bowl add saffron strings to it and 1 tbsp warn milk to it and mix well and keep it aside so that whole mixture get saffron color
- now take a another small bowl add 1 tbsp cornflour and 2 tbsp water in and mix well and keep stirring till it becomes liquid without lumps
- now add this cornflour-water mixture in milk and cook for 25 mins on medium flame
- please keep stirring the mixture all the time so it does not get stick to the vessel walls.
- milk will be reduced to half of its original quantity
- now switch off the gas and allow the milk to come to room temperature and then add saffron-milk mixture, cardamon powder and chopped pistachio to it... and mix well
- now fill the mixture in kulfi molds and close the lid and deep freeze it for 8-10 hours or overnight
- if u dont have kulfi moulds freeze then mixture in any bowl and cover the bowl...
- now use ice-cream stick to to remove from kulfi moulds and serve
- or serve like normal ice-cream if u have freeze in bowl
