Zafrani Biryani With Zeera Raita

Zafrani Biryani  with zeera raita
Recipe By Pakistan Master Chef Jumanabhen Moizbhai Jodiawala


Ingredients :
Chicken or mutton 1kg
Rice 750gm or 3 1/2 cups
Onion 1amall finely chopped
Seeds of 4 black cardamom
Small cardamom 8
Cloves 5 to 6
Black pepper whole 10 ton12
Salt to taste
Oil 1cup
Qewra accense if needed 2 to 3 drops 
White cumin seeds 1tbsp heaped
Yougurt 3/4 cup take out 2 tbsp nd add few strings of zafran , zarda ka colur nd a pinch of sugar nd keep it aside.rest of plain yougurt we need to add with masala.
Method:
First wash n soak Rice then take a pan heat oil and add onion,meat nd all the spices mentioned above xcept zafran n food colour wali yougurt add water n let it cook.when meat is cooked properly then check the amount of yakhni i used 3 1/2 cups rice so i took 5 cups of water or stock.add rice and let it cook over medium heat for 5 mints now in the middle make a hollow and add yougurt n zafran mixture,cover the hollow with rice  and give dum.mix it well before serving. 
Zeera Raita:
Yougurt 1 cup
Freshly roasted n crushed zeera 1/2 tsp
Bkack pepper powder 1/4 tsp
Salt to taste
Mix well all the ingredients nd serve with biryani.
