Ingredients
1.5 cups poha
1 large potato (boiled and diced)
1 onion (chopped)
2 green chillies
2 tbsp peanuts
1 tsp mustard seeds
1 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp sugar (optional)
2 tsp oil
Curry leaves
Salt as per taste

1 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp sugar (optional)

Method
1. Roast the peanut.
2. Boil the potatoes.
3. Rinse the poha in water twice and remove the water. Do not make it mushy.
4. Gently mix turmeric powder, sugar and salt.
5. Heat oil in a pan.
6. Add mustard seeds, cumin seeds and curry leaves.
7. Once they start to crackle, add onion. Saute it till it becomes soft.
8. Add green chillies. Saute for a while.
9. Add roasted peanuts, poha and potatoes. Mix everything gently.
10. Cover the pan and cook for 1-2 minutes on low flame.
11. Switch off the gas and garnish it with coriander (can also add lemon juice).
