- Waras ma banaviye chhe khas....

- Easy chhe banavu ane ghani healthy bhi chhe....

SU JOSE:

- 1 cup khandela ghav
- 1.5 cup gur/gol/jaggery (taste na hisab si adjust kari sakye chhe)
- Pure ghee
- Sukha nariyal no bhukko (khaman)

- Garam pani ma gol ne palahri ne rakho jyar tak barabar melt na thai jai.... Pachhi pani gali lo....

BANAWANI REET:

- Pehla 2 chamchi shakkar ne amber sathe grind kari lo....

- Pachhi chasni banavo.... Chasni banavti waqt ehne slow flame par rakhi ne barabar hilawta raho taake barabar shakkar pigli jai....

- Pachhi chasni ma je shakkar-amber grind kidu chhe ae milavi do.... slow flame par rakhi ne hilawta raho....

- Feen jem thava laage toh gas par si lai lo....

- Ek thali ma ghee si greasing kari lo taake chipke nahi ane aasani si nikli jai....

BOHRA STYLE DAAL CHAWAL WITH MUTTON

Bohra Style Daal Chawal with mutton

Recipe By:
Khadijaben Mustafabhai Godhrawala Saeedi
Ingredients:
Mix lentils or mung lentil 1/2cup
Turmeric powder 1/4tsp
Tomato 1medium size
Salt as per taste
125g mutton meat with bones or u can add more
Ginger garlic paste 1/2tbsp
For bhagaar:
Oil 1/4cup
Onion 1 small
Green chillies finely chopped 1tsp
Coriander finely chopped 2tbsp
Garlic finely chopped  1tsp
Cumin seeds 1/2tsp
Curry leaves 1tbsp
Whole red chillies 3-4
Red chilli powder 1tsp
Cumin powder 1/4tsp
Coriander powder 1/4tsp
Turmeric powder 1/4tsp
Whole spice powder 1/4tsp
Chicken/mutton cube (soup stock) optional
1/2


Directions:
Wash lentils and soaked it for about half hour. Then add Turmeric powder and chopped tomatoes and boil it till done and then blend it little bit not fully. And put on very low flame.
Boil mutton in ginger garlic paste. And leave some stock with it. Add this boil meat with stock in lentils.
Now Prepare the bhagaar. In oil add cumin sorte little bit then add garlic and sorte well add curry leaves and onions and sorte for 2mins then add red whole chillies and all spices and chicken cube.
And add this bhagar to the simmering lentil. Then add salt. (chicken cube also contains salt).  Cover and Cook for 5mins and garnish it by green chillies and coriander.
Have with zeera rice.

SHAMI KABAB

Shami Kabab
Kharas Recipe By:
Khadijaben Mustafabhai Godhrawala Saeedi
- Recipe In English & Urdu
Written Recipe in English:
Ingredients:
-Paani (Water) 4 cups
-Qeema (mince) beef ½ kg
-Chanay ki daal (Split Bengal gram) washed 250 gms
-Pyaz (Onion) 1 medium
-Sabut lal mirch (button red chilies) 12-15 or to taste
-Dar chini (Cinnamon stick) 2 big
-Badi elaichi (Black cardamom) 3
-Namak (Salt) 2 tsp or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Kali mirch sabut (Black pepper corns) 8-10
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Dhania (Coriander seeds) 1 tbs
-Zeera (Cumin seeds) 1 tbs
-Hari mirch (Green chilies) 4-5
-Podina (Mint) ½ cup
-Hara dhania (Green coriander) ½ cup
-Anday (Eggs) 2-3
-Oil for frying
Directions:
In cooker, add water, beef mince, split Bengal gram, onion, button red chilies, cinnamon stick, black cardamom, salt, turmeric powder, black pepper corns, ginger garlic paste, coriander seeds and cumin seeds.
Bring it to boil.
Cover and cook for 30-35 mins on low flame.
If using pressure cooker, cover and cook for 10 minute.
Cook until water dries and let it cool.
In chopper, add green chilies, mint and green coriander, grind to make a coarse paste.
Add mince mixture and eggs, now grind the ingredients very well in a food processor.
After grinding the stuff, make kabab/patties of the batter with your hands.
Heat oil in frying pan and fry the kabab/patties.
Shami kababs are ready, serve with ketchup.
Important Tip:
- Use no fat meat mince.
- Lentil has to be washed only (Don’t soak it)
- After meat is tender and lentil is soft and there is still water, dry it on high flame. lentil should not become mushy.

Ingredients:

Directions:
Cooker mein pani, beef qeema, chanay ki daal, pyaz, sabut lal mirch, dar chini, badi elaichi, namak, haldee powder, kali mirch sabut, adrak lehsan paste, dhania aur zeera dal dein.
Ubaal aane ke baad, dhak kar 30 minute keliya pakayen ya jab tak daal aur gosht gal jaye. Agar pani ho tu tez aanch par pani sukha len. Daal ko bilkul nahi galena (khadi khadi ho).
Agar pressure cooker istemal kar rahe hon tu 10 minute pressure pe paka lein.
Pani sukh janay tak paka lein aur mixture ko thanda hunay tak chor dein.
Chopper mein hari mirch, podina aur hara dhania dak ker grind ker k paste bana lein.
Mince mixture aur anday shamil ker k, food processor mein tamam ajza ek saath ache tarhan grind ker lein.
Haathon ki madad sa grinded mixture k kabab/patties bana lein.
Frying pan mein oil garam ker k kabab/patties fry ker lein.
Shami kabab tayyar han, ketchup k saath serve karein.
Zaruri hidayat:
- Ache result keliye bagher charbi wala qeema istemal karen.
- Daal ko dho kar istemal karna hai. Bhigo ke nahi rakhna hai.
- Daal ko bilkul nahi galena hai, isko khada khada rakhna hai. Agar daal galne pe ajaye tu aanch tez karke pani sukha len.

Rawo (sooji) 250g
2 onions fine chopped
3-4 green chillies
1 egg
1 tamato
Salt to taste
Water
Oil to fry

To make
Ek vessel ma sooji lo ehma chopped onion , green chillies n tamato nakho  namak nakho n mix karo  pchi pani nakho n better banavo (medium)  jaru Bhi nai n patlu Bhi nai
Ehma ek egg ( bedu ) nakhi ne mix karo barabar 
N medium flam par fry karo.   *(not deep fry)*. 
N u can served with tamato ketchup or coconut cutni
Gets rdy in 30 mints child's love it

Cow ya buffalo ne bacchu thay 6 to ehnu milk 3 - 4 days use nai karatu. But e milk masi apne milk ni bali banavi sakaye 6. Try n tasted recipe 6.

Ingredients : recently baccha ne born apo hoy evi cow ya buffalo nu milk 250 ml .
Sugar 100 gms.
Chopped mix dry fruits.
3 cardamom no powder.
Method : 1. Milk , sugar,  dry fruits and cardamom powder ne ek tapela ma mix karo.
2. Idli cooker ma ya tapela ma pani muki ena par ek thali muki aa mixture ne gas par medium flam par 15 minutes thawa do.
3. Khaman - dhokla na jewa pieces kapi lo.
4. Protein si bharpur milk bali ready 6.

Milk Powder Barfi

Ingredients

  1. 1/4 cup ghee
  2. 3/4 cup milk
  3. 2.5 cup milk powder
  4. 1/2 cup suger
  5. 1/4 tsp cardamom powder (elaichi powder)
  6. chopped almonds & cashew (badam pista)

How To Make In Gujarati 
  1. Ek frying pan lo, ehma pehla ghee nakho , pachi yehna ma milk nakho continous stir karta rehjo.... pachi yehna ma milk powder nakho ...... continous stir karta rehjo ..... pachi yehna ma sugar nakho ane again stir karta rehjo...... pehla yeh ek paste banse ane pachi dhire dhire dhire thick paste bani jaase....
  2. pachi ehma elaichi powder nakhjo... ane pacho barabar mix kari lejo 
  3. hawe ek bowl lo ane ehne pehla butter/oil thi greese karilo  ane pachi ehna ma aa paste ne nikali lo.... barabar shape aapi dejo aa paste ne...
  4. pachi ehna par chopped badam pista ehna par chhidki dejo 
  5. pachi aa paste ne room temperature par aawi jawa dejo thodo time ma barfi bani jaase....
  6. room temperature par aawi jai pachi yehne bowl ma thi nikaline ek plate ma muki do ane aapne je shape aapwo hoi yeh aapi dejo,,,
How To Make in English 
  1. take a frying pan.. add  ghee to it and then add milk to it and keep stirring
  2. next add milk powder to it and again keep stirring 
  3. then add sugar to it keep stirring 
  4. first it will make thick paste without lumps
  5. then it will become like soft dough 
  6. then sprinkle cardamom powder to it and again keep stirring 
  7. take a bowl and grease it with oil/ butter 
  8. now pour the mixture from the frying pan to the bowl 
  9. give any shape u desire
  10. sprinkle chopped  almond & cashew on it 
  11. allow it come at room temperature
  12. and again cut it in your desired shapes and size 
  13. ready to serve

MEETHA DAHIWADA

1 cup soji,
1/2 cup white flour,
1/4 tsp elachi powder,
3 full tbsp ghee warm,
dahi (enough to make a soft dough),
Ireange food colour

Make chasni as you would for gulab jaman. Add  essence n a half lemon joice in the chasni.

In a mixing bowl, add the soji, flour, couler and elachi powder and mix. Add ghee to the bowl and mix well with hands until a slightly crumbly texture forms. Add the dahi to the mixing bowl slowly and mix with hands until a soft dough is formed. (Like roti dough.) Leave to rest for around an hour. Roll dough into a big circle (not too thin). Cut out circles with a still glas. Them make some cut in middel by knife so it doesnt puff.

Heat oil on medium heat for deep frying.
Deep fry until the dahi varas is golden brown.  Transfer to a plate, hv tissu on plat. When dahiwadas r cold deep one by one all dahiwara in chasni n put them in serving dish.

Pakavela chawal  ( agar leftover hoi to behtar)
Bafela bateta
Hari mirch
Rai
kari patta
Singdana crushed
Little cornflour 2tsp

Method

Bafela bateta ne Pakavela chawal ma grate kari, namak nakhi rehwa do
Thodu oil lai ehma rai,  kari patta,  leela marcha (barik molela) & Singdana no bhuko nakhi ....aa vaghar ne chawal bateta na mixture ma nakhi , cornflour nakhi mix karo.

Ehna wada banavi eggs ma dip kari fry karo.

- 1/2 tspn Salt
- 2 cup bowl maido
- 1 tspn instant yeast (khameer)
- 1/2 tspn sugar
- Warm water

Banawani Reet:

- Maida ma namak, khameer ane sugar mix karine pani nakhi ne masli lo.... Soft dough banvo jove.... Jove toh thori vaar ehne dhaki ne rakhi sako chho ya tarat use kari sako chho....

- Roti si mohti size na lava banavi ne roti jem vani lo.... Thick banvu jove paratha jem....

- Pachhi naan na ek side par pani chhirki do ane medium flame par rakhi ne pani wali side tawa par nakhi do....

- Bubbles thava laage pachhi tawa ne turn kari do... Thoru upar rakhjo flame si....Naan tawa par si pare nahi....

- Barabar sekai jai pachhi lai lo....

- Ghee ya butter lagavi ne garam serve karo....

* Chaho toh maida ma egg ane tel bhi nakhi sako chho....

Tandoori Naan Without Tandoor

- Tandoori naan is made on tandoor....

- It is served with vegetables, non-veg or gravy dishes....

- In this post we will see how to cook tandoori naan without tandoor.....

Things Needed:

- 1/2 tspn Salt
- 2 cup bowl all purpose flour
- 1 tspn instant yeast
- 1/2 tspn sugar
- Warm water
- Egg (optional)
- Oil (Optional)

How To Make:

- Put all purpose flour in a bowl, put yeast, salt and sugar and knead it well.... Bind it into a soft dough....

- Make balls bigger than roti size....

- Roll it like roti.... It should be thick....

- Sprinkle water on one side of the naan....

- Heat the tawa on medium flame and put the water side par on the tawa...

-Once the naan starts bubbling turn the tawa over the flame to cook from top... Keep little distance between tawa and flame....

- Apply ghee or butter and serve hot....

Khaarak ne overnight milk maa soak karwanu ...milk good amount maa lewanu.....
Pachi saware ekj milk maa khaarak ne boil karwanu ....Jahan Tak ki khaarak soft and milk ekdum ghadu mawa jewu bani Jai....( Agr boil Karti waqte milk fatawi bhi Jai toh wando nahi....ee mawo bani jaase) ...
Pachi khaarak ne nikali ne ehna seed nikali dewanu ane je mawo bani che milk no ehne khaarak maa fill Kari dewanu...
Note.. khaarak saathe mawo banse toh ehna khaarak ni mithaas ane taste aawi jaase tese sugar add karwu nahi padhe....Haan haji flavour enhance karwane dry fruit powder ane rose water mawa maa add Kari sake che...

- Sarki ghani tasty hoi chhe ane ghani easy chhe banavu....
- Masoor Pulav sathe sarki fine laage chhe....
- Sarki banavane gas ni zarurat bhi nahi parti....

SU JOSE:
- Namak
- Masoor Dal nu pani
- 2 tspn masoor dal bafeli
- 2 tblspn kachi singh (peanuts)
- 2 tblspn daliya
- 2 tspn white tal
- 1 tspn akhkhu jeeru
- 10 kali lasan
- 1 green marchu
- 5-7 patta fudina na barik kapela
- 1 green pyaj
- 1 cup chhas

BANAWANI REET:
- Masoor ni dal bafye toh ehnu pani sarki maate use karsu....
- kachi singh, daliya, tal, khas khas, akhkhu jeeru, lasan , ane green marchu grin kari ne paste banavi lo....


- Pachhi aa paste ne dal na pani ma nakhi do ane sathe 1 cup chhas milavi do....
- Fudino barik kapi ne nakho ane green pyaj barik kapine ne milavi do.... Ane 2 tspn bafeli masoor dal masli ne milavi do....
